Method
- Preheat oven to 375.
- Cook and prepare chicken to your liking (chill and dice/cut into bite-sized pieces).
- Bake bacon for 12-15 minutes.
- Remove bacon from oven and rest for 10 minutes. Once cool, dice into bite-sized pieces.
- In a small bowl, whisk together olive oil, mustard, honey, lemon zest, salt and tarragon.
- Assemble each burrito with 10 oz. of diced chicken, ½ diced tomato, ½ avocado, bacon and romaine. Drizzle dressing on top and roll the tortilla.
- Cut each burrito in half and enjoy!
