CARDAMOM ROASTED CARROTS

Ingredients
  

  • 4 each Carrots, medium, washed and unpeeled
  • 2 T. Honey, local if possible
  • ½ tsp. Cardamom, ground
  • 2 tsp. Olive oil
  • Salt and ground black pepper to taste

Method
 

  1. Preheat oven to 375 degrees.
  2. Prepare a sheet pan with parchment paper to prevent the carrots from sticking to the pan.
  3. Cut carrots ¼ inch thick and on a bias (slanted/hard angle medallions).
  4. In a bowl, toss carrot slices with honey, cardamom, olive oil, salt, and pepper until evenly coated.
  5. Spread slices evenly on the sheet pan, making sure they do not overlap.
  6. Roast carrots in the oven for 45 minutes (feel free to check on carrots after 25 minutes). Remove from oven once they have reached your desired doneness.
