HONEY CHIPOTLE VINAIGRETTE

Ingredients
  

  • 6 oz. Chipotle in Adobo, stems discarded
  • 1 each Garlic clove, peeled
  • ½ T. Dried oregano
  • ¼ bunch Cilantro, stems and leaves
  • ½ each Lime, juiced
  • 1 oz. Honey, local
  • ½ oz. Water
  • 1 oz. Red wine vinegar
  • 5 oz. Olive oil
  • to taste Salt and pepper

Method
 

  1. Using blender/Vitamix, blend all ingredients except olive oil until smooth consistency.
  2. Slowly immerse olive oil with ingredients while blender is on low to moderate setting.
  3. Check consistency and adjust seasonings. Make sure not to over blend.
  4. Use salt and pepper to taste.
  5. Enjoy!

Servings: 20-24
