NUTTY CHICKEN

Ingredients
  

  • 4 each Chicken thighs, boneless and skinless, 5 oz. each
  • ½ cup Cashews, raw, crushed or chopped
  • ½ cup Almonds, blanched, crushed or chopped
  • 2 each Eggs
  • ¼ cup Olive oil
  • ¼ tsp. Salt

Method
 

  1. Preheat oven to 375 degrees.
  2. Prepare a baking sheet by lining with parchment paper and lightly coating with olive oil.
  3. Lightly whisk eggs in a medium bowl.
  4. In a separate bowl, mix nuts together.
  5. Dredge chicken thighs in eggs, evenly coating them.
  6. Transfer chicken to nuts and evenly coat.
  7. Arrange nut crusted chicken on baking sheet. Season chicken with a pinch of salt.
  8. Bake 15-22 minutes or until chicken is done. Enjoy!
