SAUTEED CAULIFLOWER RICE

Ingredients
  

  • 1 each Cauliflower head, large, stem and leaves removed
  • 1 ½ tbsp Olive oil
  • 3 each Garlic cloves, minced (optional)
  • ¼ tsp. Kosher salt

Method
 

  1. Remove stem and leaves from cauliflower head.
  2. Using a sharp knife, cut through the cauliflower while shaving down the sides as you move through the entire head. Be sure to cut the cauliflower into evenly sized pieces.
  3. Add cauliflower to a food processor and pulse 7-9 times until desired size.
  4. Add olive oil to a medium sauté pan.
  5. Add garlic to the pan and turn on the heat to medium high. Cook garlic for 2-3 minutes.
  6. Add cauliflower to the pan and let it sit and cook for at least 1 minute, allowing one side of the cauliflower rice to brown.
  7. Stir and allow rice to sit for another 1-2 minutes. Stir and cook for another minute until done.
  8. Taste and season to your preference. Enjoy!

Servings: 3-4
