ARUGULA PESTO

Ingredients
  

  • 8 cups Arugula, fresh and packed
  • 3 each Garlic cloves, peeled
  • 1 cup Parmesan cheese, shredded
  • 1-2 T. Pine nuts or walnuts, roasted
  • ¼ cup Extra virgin olive oil
  • to taste Salt and pepper

Method
 

  1. In a food processor combine first four ingredients (batches if necessary), 2 T. of EVVO, S&P and pulse to combine.
  2. In mixing bowl combine contents from food processor and remaining EVOO.
  3. Check consistency and adjust seasonings.
  4. Place in quart container, plastic wrap sealing air inside container, place lid on container. Enjoy!
