NUT & DRIED FRUIT TURTLES

Ingredients
  

  • 1 cup Nut of choice, toasted pistachios work well
  • 1 cup Dried fruit of choice, halved or chopped (apricots work well)
  • 1 cup Bittersweet chocolate, melted, 55-60% cacao
  • ½ tsp. Himalayan salt

Method
 

  1. Toast nuts in a dry heated pan or in the oven (baking sheet) for 5-10 minutes at 275 degrees. Set aside.
  2. Melt chocolate using double boil method. This keeps the chocolate from burning.
  3. Place a large piece of parchment paper on a large baking sheet.
  4. Evenly distribute 1 T. of nuts onto the parchment, leaving 1-2 inches between each pile.
  5. Place small amount of dried fruit on top of the nuts.
  6. Using a spoon, pour 1 T. of melted chocolate onto each cluster of nuts and dried fruit.
  7. Top the melted chocolate with the remaining dried fruit and small amount of salt on each turtle.
  8. Place baking sheet into the fridge for 15-20 minutes to set. Enjoy!
  9. Keep turtles in an airtight container at room temperature or in the fridge.
