SEARED SCALLOPS

Ingredients
  

  • 1.125 lbs sea scallops (approximately 16)
  • 2 T. olive oil
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Method
 

  1. Rinse scallops with cold water; thoroughly pat dry.
  2. Add the olive oil to a 12 to 14-inch saute pan on medium high heat.
  3. Salt and pepper the scallops.
  4. Once the oil is hot, gently add the scallops to pan, making sure they are not touching each other.
  5. Sear the scallops for 1 ½ -2 minutes on each side. The scallops should have a ¼ -inch golden crust on each side while still being translucent in the center.
  6. Serve immediately.
