TOMATO SHALLOT GRAVY

Ingredients
  

  • 4 T. Olive oil
  • 4 each Garlic cloves, peeled and minced
  • 3 each Shallots, large and diced
  • ½ tsp. Kosher salt
  • 1 T. Thyme, dried
  • 1 tsp. Oregano, dried
  • ¼ tsp. Black pepper
  • 2 T. All-purpose flour, use gluten-free flour if needed
  • 6 each Tomatoes, medium to large and quartered
  • ¾ cup Vegetable stock

Method
 

  1. Pour olive oil in a 2-quart saucepan on medium high heat.
  2. Add shallots, garlic, salt, pepper, thyme and oregano. Cook for 30 seconds to start the browning process.
  3. Add flour, using a whisk stir constantly until flour and vegetable mixture starts to darken to a light tan color, about 2 minutes.
  4. Add tomato and stir to incorporate all ingredients while scraping the bottom of the pan.
  5. Add veggie stock and turn to high heat.
  6. As soon as gravy mixture reaches a boil, reduce to low and simmer for 30-45 minutes or until gravy meets desired thickness.
  7. Adjust for salt and pepper if desired and enjoy!!

Servings: 6-8
Serving Size:  1 1/2 to 2 oz.
