CALIFORNIA BLT

Ingredients
  

  • 2 each Whole wheat wraps/tortilla, burrito size
  • 1 ½ lb. Chicken breast, grilled or baked with seasonings of choice
  • 1 each Tomato, sliced and diced
  • 1 cup Romaine lettuce, chopped
  • 1 each Avocado, diced
  • 4 slices Bacon, cooked and diced
  • ½ cup Extra virgin olive oil
  • 1 tsp. Dijon mustard
  • 1 T. Honey, local if possible
  • 1 tsp. Lemon juice
  • ½ tsp. Lemon zest
  • ½ tsp. Tarragon, fresh, minced
  • ¼ tsp. Salt

Method
 

  1. Preheat oven to 375.
  2. Cook and prepare chicken to your liking (chill and dice/cut into bite-sized pieces).
  3. Bake bacon for 12-15 minutes.
  4. Remove bacon from oven and rest for 10 minutes. Once cool, dice into bite-sized pieces.
  5. In a small bowl, whisk together olive oil, mustard, honey, lemon zest, salt and tarragon.
  6. Assemble each burrito with 10 oz. of diced chicken, ½ diced tomato, ½ avocado, bacon and romaine. Drizzle dressing on top and roll the tortilla.
  7. Cut each burrito in half and enjoy!

Notes

Servings: 4
Serving Size: ½ prepared burrito
Nutrition Information: This wrap can easily be modified by substituting the tortilla for bread or can be made into a salad with croutons or toppings of choice.
